Brocco-Cheese Burritos

Ingredients:
2 Tbsp olive oil
10 oz frozen chopped broccoli, defrosted and squeezed dry or couple large stalks fresh broccoli, trimmed, and chopped finely
8 eggs
spash of milk
salt and pepper
4 large whole-wheat tortillas
1 cup cheddar, shredded

Directions:
1.  Heat oil in large nonstick skillet over medium-high heat.  Once it's hot, add defrosted broccoli and cook for 2 minutes (if using fresh broccoli, cook stirring every now and then, until lightly browned, 5 to 6 minutes).
2.  Beat eggs with splash of milk and season with salt and pepper.  Add eggs to the skillet and scramble with broccoli.  Remove from heat.
3.  While broccoli and eggs cook, heat tortillas in dry skillet over medium-high heat until blistered and soft, 1 minute on each side.
4.  Make burritos by placing one quarter of the hot eggs on one side of each tortilla.  Top with one quarter of the cheese, tuck in the sides, then wrap and roll.  Wrap in foil to eat on the go.
