Pancake Tacos with Fruit Salsa


Ingredients:

Any combination of these to equal 5 cups:
1 cup blueberries
1 cup sliced strawberries
1 cup blackberries
1 cup sliced kiwi
1 cup raspberries
1 cup sliced banana
1 cup diced apples
1 cup orange slices
Pancakes
Vanilla yogurt

Directions:
1.  Mix fruit in medium bowl and set aside.
2.  Prepare pancakes according to package directions.  Make pancakes a little extra large, cooking until golden on each side.  Place 1/2 cup fruit salsa in center of pancake and top with a dollop of yogurt (or drizzle of syrup).  Fold like a taco and serve.  Repeat as you make rest of pancakes.
