Apple Topping for Pancakes

Ingredients:
8 medium McIntosh apples, peeled, cored, diced
3/4 cup apple cider
1 cinnamon stick
3/4 cup pure maple syrup

Directions:
1.  Combine apples and cider in medium sauce pot.  Add cinnamon stick and cook until the apples break down and become a chunky sauce, about 12 to 15 minutes.  Stir in maple syrup and reserve over low heat while preparing pancakes.
