Mexican Soup

This soup was a creation I made one night just wanting to use up some squash and zucchini in the fridge, and it was a big hit!

3 Tbsp olive oil
1 large onion, diced
4 cloves garlic, diced
8 cups water
2 large chicken boullion cubes
4 squash, diced
4 zucchini, diced
1 bell pepper, diced
2 cans petite diced tomatoes
1 can crushed tomatoes
1/4 tsp red pepper flakes
1/8 cup fresh basil, chopped
1/2 tsp cumin
2 chipotle peppers (canned)
1 large can black beans
2 large handfuls fresh spinach

Serve with cheddar and sour cream!
