Copycat Pizza Hut's Romano Cheese Dressing

SO, I have been on the lookout for a copycat recipe for Pizza Hut's Romano Cheese dressing for over a decade! Really, since I worked there back in high school in the mid '90s!

And, unfortunately, I have yet to find one!

So, today I decided to attempt it. I got online and went to Pizza Hut's ingredient info and pulled all the ingredients that they use...or close to it.

And, I just started throwing it together! I looked at a few other recipes to see about what the ratios would need to be for a creamy dressing...

And you know what?! Other than the fact that it's got a bit too much lemon in it, it's otherwise perfect (I decreased the lemon below)! :) SOOOOOOOOOOO excited!!!!!! I can't wait til dinner's ready to toss it on a salad! And of course, it's amazing on breadsticks and pizza crust!

Romano Cheese Dressing

Ingredients:
1/4 cup olive oil mayonnaise
1 Tbsp olive oil
2 tsp cider vinegar
2 Tbsp shredded Romano cheese
1 Tbsp grated Romano cheese
1/2 tsp minced garlic
1/4 tsp sugar
1/4 cup milk
1 tsp lemon juice

Directions:
1. Combine milk and lemon juice in a small bowl or measuring cup. Let sit for about 5 minutes (this will curdle the milk, making buttermilk!)
2. In larger bowl, combine mayonnaise, olive oil, cider vinegar, romano cheese, garlic, and sugar.
3. When milk has set for 5 minutes, pour into other ingredients. Blend in blender or with an immersion blender to fully combine and make creamy!.

  1. I also love Pizza Hut's Romano Cheese dressing and have been scouring the internet for a copycat recipe. I tried yours and it is fantastic! I did make a couple of changes, however, the second time I made it:

    1) Instead of curdling the milk with lemon juice, I just used regular buttermilk. It was thicker and creamier and gave a better texture.

    2) I used about half as much garlic, since it was a little strong for my taste.

  3. I tried to invent a copycat based on homemade mayonnaise. This is a tasty trial batch; easy to make.

    Mystic Pizza Hut Romano Dressing

    1 cup neutral oil
    2 oz buttermilk or milk
    2 T red wine vinegar or other vinegar
    2 T. lemon juice
    ½ tsp salt
    2 tsp minced garlic or equivalent powder
    ½ tsp white pepper or black pepper
    ½ tsp mustard powder
    ½ tsp onion powder
    2/3 cup grated Romano, pre-blended to small grain
    ¼ tsp MSG or omit
    2 eggs 1 might be enough

    Stick blend all ingredients except oil in 1 pint container.
    Add oil very gradually while blending until it thickens but remains pour-able, refrigerate; it will thicken more.

    This is pretty tart, maybe 1T lemon juice, not 2
    Could double the pepper
    Could add 1/3 cup more cheese
    Could add ½ tsp more salt
    Could add ½ to 1 tsp sugar
